<p>This has become one of my most successful dishes. I remember the first time I saw cucumbers being sautéed. I thought wow ok it seems a little strange, but I get it. The chef who introduced this to me was opening a new place down on west 23rd. I had been working as a Sous Chef for almost a year at a very successful Two Star French Bistro and was looking for a change. I had been trailing (trying out) for the Sous Chef position. The Chef and I had been working on some new dishes. Things were going well, the chef enjoyed my dishes and was very impressed until…. We talked about money. It’s funny how money and peoples ego’s get in the way of life. How was I to know that as a Sous Chef I had been making more money than this new Head Chef of this hip “VIP” scene? Once that was out on the table his ego got in the way and the digs began. “You’re not experience enough to be a Sous Chef, but how about working the line?” That place is closed now, but it’s funny how you can find some good even if it’s hidden behind someone ego. Anyway&#8230; LET’S COOK!</p>
<p><strong>Wild King Salmon:</strong><br />
2 (8oz) Wild King Salmon skin on<br />
8 oz Morel or wild mushrooms of your choice.<br />
½ cup peeled seeded cucumber<br />
1 cup roasted poblano guacamole recipe to follow<br />
1 cup spicy citrus glaze<br />
½ cup white wine (Maybe a French Chardonnay that has citrus notes, and serve remaining to your guest)<br />
3 oz butter</p>
<p><strong>Poblano Guacamole:</strong><br />
2-3 ripe avocados<br />
2 poblano peppers roasted and pureed<br />
2 tomatoes diced<br />
½ cup diced red onions<br />
¼ cup chopped cilantro<br />
¼ cup chopped parsley<br />
½ cup olive oil<br />
Salt &amp; Pepper to taste<br />
Lemon juice to taste</p>
<p><strong>Citrus Glaze:</strong><br />
½ cup honey<br />
¼ cup orange juice<br />
4 tes grated lemon peel<br />
2 tes grated lime peel<br />
1-2 Habanero chili or similar chili finely diced.</p>
<p>If you’ve never cooked with habanero chilies let me tell you they are “WTF HOT”, so please be careful and very mindful of where you put your hands before you wash them very well.</p>
<p><strong>Wild Salmon:</strong><br />
Here’s a little tip for always getting that crispy skin on your fish. Start with the Salmon skin side up using a couple paper towels pat dry the skin! Simple huh, season with salt and pepper and hold. Heat a sauté pan over on medium flame, drizzle in a ¼ cup of oil and heat until the surface shimmers. Place salmon in the pan skin side down and press with spatula. Here is the tricky part. Leave the fish “alone” skin side down for three mins. Another very important thing a Chef has to learn is how to control your heat. If you see that your heat is too high or not high enough….adjust!! Flip the fish and cook another 2 mins for medium rare.</p>
<p><strong>Plating:</strong><br />
Taste, taste, all of your components before you plate because when it’s in front of your guest you can’t take it back. Remove the salmon from the pan, brush the glaze over the salmon and hold aside, add mushrooms and sauté until crispy remove from pan and hold with salmon pour off excess oil add wine, butter, and reduce until sauce has thicken season with salt and pepper. Toss cucumber into sauce to heat. Place about 2-3 oz of Guacamole in the center of a plate, follow by salmon, mushrooms, and finish with cucumbers and sauce.</p>

<p>I consider myself an organized gal who likes to eat healthy (for the most part). When I go out for the day most of the time I bring along healthy snacks, usually tossing them in my purse. I find that if I&#8217;m only running out for a short time this is fine. However there are times I&#8217;m out all day and I can&#8217;t exactly vouch for the freshness of my purse treasures which can be tricky when you&#8217;re packing turkey roll ups or any meat product that might require coolness. With this lunchbox I could throw an ice pack in and keep things cool. Try doing that with your designer purse.</p>

<p>The EasyLunchbox System has eliminated this problem for me. At first when I examined it out of the box I thought well I could use my lunch bag and some storage bowls and be fine. I learned however in testing both that the Glad storage bowls did not seal in the same way the EasyLunchbox system did. With regular storage bowls I had issues when they inevitably popped open and spilled their contents.</p>
<p>EasyLunchBox  comes with 3 air tight (dishwasher safe) containers with compartment for sandwiches and two sides that stack together and fit neatly into the lunch bag. There is enough room in each compartment for enough food to keep you going all day. An added bonus for me was my youngest child liked it because it looked like a Lunchable but my food tasted better.</p>
<p>Also I had fewer trips to the fast food window when I planned ahead and packed my EasyLunchbox. I consider it a part of my weight loss strategy. The price is so inexpensive ($13.95 for four containers and lids and $7.95 for the lunchbox itself)  I had no excuses not to fill it with healthy delicious foods.</p>
